The producers Jim and Helen Watts only purchased the winery in 1984 and produced their first wine in 1994. It was an immediate success and they have since then seen a continuous stream of medals for their wines at local and regional shows. This wine, a 100% Cabernet Sauvignon is matured in a combination of French and American mostly new oak and is a prime example of the quality they produce. The hints of blackcurrant and blackberry are typical characters of this variety, but typically McLaren Vale produces a dark, spicy chocolate character although the palate also shows refreshing signs of mint, leather and dark cherries. As with all the Fox Creek wines the structure has some tannins from the fruit and oak well balanced with acidity to give great length to the palate.
